Ingredients

    1/2 cup of chicken broth
    1 tbsp of red wine vinegar
    1 tbsp soy sauce
    2 tbsp sugar
    1/2 tbsp cornstarch
    1 clove of garlic
    1 cup of pea pods
    6 oz chicken
    2 cups brown rice (cooked)

Directions

For sauce, in a small bowl stir together chicken broth, vinegar, soy sauce, sugar, cornstarch, and garlic; set aside.

In a large skillet, heat oil over medium-high heat. Add pea pods and cook for about one or more minutes until crisp-tender. Remove from skillet and set aside.

Add chicken to skillet. Cook and stir for 3 to 4 minutes or until chicken is no longer pink. Push chicken from center of skillet. Stir sauce; add to center of skillet. Cook and stir until thickened and bubbly. Add pea pods and heat. Serve with brown rice.
