    1 can (28 oz) diced tomatoes, undrained
    1 package (8 oz) Stove Top chicken suffing mix
    2 cloves garlic, minced
    2 lb boneless skinless chicken breasts cut into bite size pieces
    1 tbsp basil leaves
    1 1/2 C. part skim shredded mozzarella cheese


1. Preheat oven to 400 degrees. Place tomatoes with all the juices in a medium bowl. Add stufffing mix, 3/4 cup hot water, and garlic; stir just until stuffing mix is moistened. Set aside.

2. Place chicken in a 13x9 inch baking dish. Sprinkle with the basil and cheese. Top with stuffing mixture.

3. Bake 30 minutes or until chicken is cooked through.

Makes 8 servings.

Delicious served with steamed green beans and roasted egg plant.
