Ingredients

    1/4 cup canola oil
    1/2 cup orange juice
    2 eggs
    1 1/2 cup carrots
    1/2 cup applesauce
    1/2 cup brown sugar
    1 1/2 tsp cinnamon
    1 1/2 tsp baking powder
    3/4 tsp baking soda
    3/4 tsp salt
    1 3/4 cup oatmeal

Directions

Puree (I use a blend-tec) the carrots with the applesauce, oil, eggs, and orange juice. Add the other ingredients and mix well. Place in lined muffin tins and bake at 350 degrees for 45 minutes
