Introduction

A yummy way to eat raw kale. Be prepared to get a little messy! A yummy way to eat raw kale. Be prepared to get a little messy!
Number of Servings: 3

Ingredients

    6 cups kale
    1/3 cup chopped red onion
    1 small avocado
    1/4 cup loosely packed raisins
    2 tablespoons lemon juice
    2 tablespoons apple cider vinegar
    salt and pepper to taste

Directions

1. Remove kale from stems and wash thoroughly.
2. Put all ingredients except for raisins into a large bowl.
3. Using your hands massage the avocado, lemon juice, and vinegar until all of the avocado is gone. You really want to get in there and get your hands dirty. The acids and salt "cook" the kale and the avocado acts as a dressing.
4. Add the raisins and more salt/pepper if needed, toss gently.

Serving Size: Makes 3 2-cup servings
