Ingredients

1 tsp. cocnut (or any) oil
1/2 large onion
8 oz. sliced mushrooms
4-6 cups fresh spinach
4 eggs
3 egg whites
salt
pepper
2 tbs Green yogurt - plain
6 slices Galaxy Veggie Cheese (Cheddar)
Directions
Saute' onion and mushroom in 1 tsb refined coconut oil. Add fresh spinach and cook down.
Beat eggs, egg whites and salt and pepper to taste with 2 tbs of Greek yogurt. Pour over onion/mushroom/spinach mixture and spread evenly. Place the slices of veggie cheese on top of mixture. Cook on medium heat until eggs begin to set.
Transfer frying pan into pre-heated over and bake for 10-15 minutes at 350. Cut with knife and serve when done.
Serving Size: Could easily serve 4-6 people but we use as 3 generous portions and skip the toast.
