Ingredients

    8 cups of fat free (skim) milk
    1/4 cup fat free yogurt with active cultures

Directions

Pour 8 cups of milk in microwavable dish -- I use an 8 cup Pyrex bowl. Heat the milk to 180 degree in microwave. Each microwave is different, I set mine for 5 minutes, stir, set for another 5 minutes, stir, then another 4 minutes. After the last 4 minutes the temperature is 178-182. Small bubbles will appear around the edges. Let cool to 110 degrees, stirring occasionally. In a small bowl mix the 1/4 cup of yogurt and 1 cup of the warm milk, stir into the large bowl of warm milk. Cover with plastic wrap, set in oven with oven light on, I let it set 8 hours. I pour off the whey (the liquid that has seperated and is on top of the solids. I then line a pasta collendar with coffee filters, pour the solids in the collendar, and let it drain for about an hour. It is now the consistency of thick yogurt. You can replace the wet coffee filters with dry ones to wick out more moisture and use it as a ricotta or cream cheese substitute. For yogurt, you can add jelly, jam or flavored coffee creamers to change the flavor and thickness...Just add the calories into your calculation.
