Ingredients

    1 medium butternut squash, peeled and cut into 2 inch cubes
    2 medium apples, cored and sliced
    1 small sweet onion, diced
    2 cups TJ's hearty vegetable broth
    1 tsp pumpkin pie spice
    Smart Balance Omega cooking spray

Directions

Pre-heat oven to 425 degrees. Combine apple slices and butternut squash in a deep casserole dish (cast iron is preferable). Coat with a few sprays of Smart Balance Omega Cooking Spray and sprinkle with pumpkin pie spice, and mix with your hands. Cover and roast in oven for 45 minutes. While apples and squash are roasting, set a large saucepan over low heat combining 1 cup water, diced onions and a few short squirts of cooking spray. Sautee for 7-10 minutes or until onion turns translucent. Be careful not to let the onion burn; add more water during the sautee if you get nervous. Once the apples and butternut squash are done roasting, carefully add everything to the saucepan with the onions . Top with 1 cup of hearty vegetable broth. Cover and simmer over medium heat for 10 minutes, stirring occasionally. Remove lid and simmer for another 5 minutes. From here, carefully transfer to your Vitamix, blender or food processor. Turn machine on and slowly increase to full power; blend on full power for 2-3 minutes or until desired consistency adding the remaining cup of broth to thin the puree as needed.
