Ingredients

Vegan Sausages 6 sausages depending on the size, around 20 oz (600g)
3 cups canned diced peeled Tomatoes, (800 g)
1/2 cup Onions, chopped
1 tsp Sambal Olek (chilli paste)
2 cloves Garlic, crushed
1 cup White (Cannellini) Beans, canned, drained
1 tsp Oregano, dried
1 tsp Basil, dried
2 tsp Granulated Sugar
1/4 tsp Black Pepper, freshly ground if possible
Directions
Lightly saute the sausages until golden brown. Remove and keep warm.
In the skillet saute the onions in a little water until soft, add the garlic and chilli, then the tomatoes, saute for 5 minutes. Add the Oregano, Basil, sugar and the drained beans and pepper to taste, cook for @5 minutes until onions are soft.
Either place the sausages in a bowl and pour the sauce over the top, or chop the sausages into bite sized pieces and stir through the sauce.
Serve with crusty bread if liked
