Introduction

Similar to tabouleh, but we like this version much better Similar to tabouleh, but we like this version much better
Number of Servings: 8

Ingredients

    1 cup cooked rice (my favorite is jasmine rice)
    2 large bunches of flat leaf parsley, leaves coarsely chopped
    1/2 cup peppermint leaves, chopped fine
    2 cups peeled, seeded and diced cucumber
    1 cup diced radishes
    4 tbsp finely diced red or vidalia onion
    juice of 2 large lemons
    8 tbsp extra virginolive oil
    salt and pepper

Directions

Add ingredients in order given to a large bowl. Toss gently and marinate 2 to 4 hours before serving. Correct seasonings if necessary.
