-
Beans, black, 2- 15oz cans
Yellow Sweet Corn, Frozen, 1 cup kernels
2 Carrots, chopped finely
Flour (.5-1c, depending on consistency)
Bread crumbs, .75 cup
Salt, 2 tsp (to taste)
Pepper, black, 2 tbsp (to taste)
Serrano Peppers, 1 pepper (They are spicy, so use to your liking or leave out)
Pepper, red or cayenne, 1 tbsp
1/2 c onions, finely chopped
1/2 c water
Directions
Add water, chopped onion, chopped carrot, corn and seasonings to a small frying pan. Cook until veggies are soft (about 10 minutes).
Place drained and rinsed black beans in a large bowl. Semi-mash the beans.
Add mixture from frying pan.
Add bread crumbs and mix.
Slowly add flour until you reach a consistency that you can easily make into patties without being too sticky.
Form into 8 patties.
I separate them with wax paper in a container in the fridge. You can also freeze them individually in plastic wrap.
