Introduction

Don't let the fat/calories scare you, they are mostly from the Omega 3 packed flaxseed and walnuts. With 4 gr of fibre and 5 gr of Protein - this is a breakfast-worthy muffin.

Recipe can be made without the cranberries/walnuts - I just had some leftover home-made cranberry sauce from Thanksgiving and added it to the wet batter, that prompted the orange zest/juice - and the result was very yummy!

Ingredients

    3 bananas mashed
    1 egg
    1/2 cup ground flax
    1/2 cup cranberry sauce or chopped fresh/frozen cranberries (optional)
    zest of one orange (optional)
    juice from one orange (or 3 tbsp of any other liquid)

    1 cup whole wheat flour
    1/2 cup white flour
    1/2 cup oatmeal
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1/4 tsp ground nutmeg

    1/2 cup chopped walnuts (optional)


Directions

Combine wet ingredients. Include the ground flaxseed.

Sift together dry ingredients.

Fold wet into dry without over mixing. Fold in walnuts.

Bake in greased muffin tins for 18-20 min at 350.
