Introduction

Family friendly and much healthier than fried fish from a box! Family friendly and much healthier than fried fish from a box!
Number of Servings: 6

Ingredients

    1.5 lbs tilapia
    4 tbs Olive Oil
    1 Cup chopped scallions (green onions)
    3 Tbs parsley
    2 Tbs flour (1/2 white and 1/2 wheat)
    2 garlic cloves minced
    1 tbs lemon peel grated
    2 cups bread crumbs
    1 large egg
    dash of salt and pepper


Directions

Cook fish in skilltet with salt, pepper and 2 tbs of olive oil until opaque (about 4 min) Remove from skillet and flake into large bowl. Add onions, parsley, flour, garlic, and lemon peel. Mix in 1 cup of bread crumbs. Add beaten egg and mix together. Shape into 6 cakes. Dip cakes in remaining 1 cup of bread crumbs coating on all sides. Add remaining 2 tbs of olive oil to pan and fry cakes for about 5 minutes a side until lightly browned and heated through.
