Introduction

Ingredients

3 oz Chicken Breast, no skin, Diced Small
1/2 C Celery, raw, diced
3 T Green Onions-White ends, finely sliced (about 4 ends)
1 clove Garlic, finely diced
1 tsp Ginger Root - grated or finely diced
1.25 tsp Cilantro, dried,
2 C Spinach, fresh, chopped
.5 tsp **BRAGG Liquid Aminos, (or 1/2 tsp Soy Sauce)
Directions
Dice, Mince, grate the Chicken; Celery: whites of green onions; Garlic and Ginger.
Put all of the above into a small saucepan and heat over low heat until chicken is cooked and the celery is softening.
While chicken is cooking coarsely chop spinach, and get out the Cilantro and Braggs Aminos if you have it. If no Braggs you can use 1/2 tsp of Soy Sauce or just omit this entry.
When celery is softened and chicken is pretty done add the can of Chicken Broth and bring heat up to boil When it boils turn down heat- add cilantro and Braggs- season to taste (I like 1-2 drops of hot sauce- optional)
Just before serving add the chopped Spinach and heat only to wilt
Serving Size: Makes 2 One-Cup Servings or One Large Bowl
