Ingredients

1/2 cup butter
2/3 cup brown sugar
1 egg
1 tsp vanilla
1 1/2 cups shredded zucchini, squeezed dry
1 1/2 cups high fibre cereal (I use Optimum Slim)
1 1/4 cup whole grain blend flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves
Directions
Cream butter and sugar with egg and vanilla extract.
Add zucchini (squeezed dry in paper towel) and high-fibre cereal. Use electric beaters to mix in zucchini and cereal, this will break up clumps and distribute evenly.
Combine flour, soda, salt, cinnamon & cloves in seperate bowl. Add to creamed mixture. Stir to combine.
Drop by tablespoon onto greased or lined cookie sheet. Bake at 300 F for about 12 - 14 minutes, or until golden. Makes about 30 cookies.
