    500g potatoes, peeled, diced
    1/2 cup frozen peas
    415g can salmon, drained, flaked
    2 tblspoons fresh dill
    1 egg, lightly beaten
    1/3 cup plain flour
    2 tblspoons vegetable oil


Place potatoes in a large saucepan. Cover with water and bring to the boil. Reduce heat to medium and cook 12-15 minutes or until tender. Drain and roughly mash. Cool for 5 minutes.
Place peas in a microwave safe dish. Cover and microwave on high for 2 minutes.
Add salmon, dill, peas and egg to mash. Mix to combine and form into 8 patties. Coat patties with flour. Cover and refrigerate for 30 minutes.
Heat oil in pan and fry for 2-3 minutes each side. Serve with salad and lemon wedges.
