Introduction

This is a healthier version of the classic Tater Tot Casserole. It replaces tater tots with diced potatoes, onion and green pepper. It is something my family loves and even the leftovers are yummy! Ingredients

    1 lb. extra lean ground beef 7% fat
    1 can Amy's organic cream of mushroom soup
    4 cups finely diced yukon gold potatoes
    1 cup of shredded cheddar cheese
    1 cup onion, finely chopped and separated
    1/4 cup green pepper, finely chopped

Directions

Preheat oven to 350 degrees F. Brown the ground beef and half of the onion. Diced the potatoes, green pepper and remaining onions and mix well. Spray a 9x13 baking pan with organic olive oil spray and scoop in the potato, green pepper and onion mixture and spread to make an even layer. Once the ground beef is browned, add soup to the beef. Pour beef, onion and soup mixture over the potatoes in the baking pan and spread evenly over top of the potatoes. Sprinkle the shredded cheese over top and bake for 35 minutes.

Serving Size: Makes 6 even servings
