Ingredients

1.25 lbs Jenn-o Italian Ground Turkey
2 Large Egg Whites
1/4 Cup Bread Crumbs Italian Style
1/4 Tsp sea salt
1/4 Tsp Ground Pepper
1.5 Cup Canned Sweet Corn
1 Can Diced Tomatoes (Basil, Garlic, Oregano)
1 Cup Chicken Broth
1 Tbsp Lime Juice
1 tsp. Cumin Powder
1/4 Cup Chopped Fresh Cilantro
Directions
One: In a large bowl, combine turkey, egg whites, bread crumbs, salt and pepper and mix well. Shape into 16 meatballs, each about the size of a golf ball.
Two:
In a large skillet, heat oil on medium high. Add meatballs and cook till brown on all sides. Add corn, beans, diced tomatoes, broth, lime juice, and cumin and mix well. Reduce heat to medium, partially covered and cook till meatballs are cooked through. Stir in Cilantro and serve.
Serving Size: 4 meatballs 1 cup Salsa
