Number of Servings: 5

Ingredients

    8 oz whole grain pasta of choice
    1 cup onion, coarsely chopped
    3 six ounce cans tuna packed in water, drained
    2 ten ounce pkg frozen mixed veggies, thawed: broccoli, cauliflower, and carrots
    8 ounce can mushrooms
    8 ounce can evaporated non fat milk
    cayenne pepper to taste
    1/2 tsp marjoram or tarragon leaves
    1-1/2 cup grated low fat cheddar cheese

Directions

Boil onions and pasta according to package directions.
Combine all other ingredients except cheese.
Transfer to a 3 quart or 8.5 by 11 inch casserole
Bake at 350 til liquid is bubbly, about 15 minutes

Sprinkle grated cheese on top and bake til cheese melts
