Introduction

Ingredients

2 tbsp - olive oil (or your preferred oil)
1 large - onion, raw
1 large - yellow bell pepper (could also use red or orange)
3-4 large - carrots
4 cups - chicken broth
2 cups - quinoa (I used Nature's Earthly Choice Organic, but use your preferred brand)
1/2 cup chopped - fresh parsley
Salt & Pepper to taste
Directions
- Chop onion, yellow pepper, and carrots into small pieces.
- Heat oil in saucepan over medium-high heat.
- Cook onion and yellow pepper in oil for 5 minutes or until translucent.
- Add carrots and cook for 3-5 minutes more.
- Stir in quinoa and vegetable broth, bring to a boil.
- Reduce to simmer and cover.
- Cook for 15 to 20 minutes, or until quinoa is tender and fluffy.
- In a bowl, toss quinoa together with parsley.
- Add salt and pepper to taste.
- Serve hot or at room temperature.
