Introduction

A Lo-Cal light cranberry salad with a crunch! A Lo-Cal light cranberry salad with a crunch!
Number of Servings: 10

Ingredients

    Whole 12 oz pkg of Ocean Spray Cranberries (3cups)
    Small Orange (peeled and chopped)
    Splenda (1 cup & a few teaspoons to add AFTER cooking to taste)
    Raw Celery (diced about 1/2 cup)
    1 cup water

Directions


1. Bring Water & 1 cup of Splenda to boil
2. Add rinsed & drained cranberries and bring back to a boil, then turn down heat to a simmer. Cover and stir about ever 2 min. Let simmer for 10 min.
3. Remove from heat and let cool for a good 10-15 min.
4. Add chopped orange and stir.
5. Add chopped celery and stir.
6. Taste. Add more splenda if you like sweeter.
Let cool completely before covering and refrigerating.
7. Serve cold by itself or with celery stix or whatever you like to dip with. Also goes well on top of turkey sandwiches.
