Introduction

Easy to make and very tasty soup. Serve with chunky, warm bread.

If it wasn't enough that this soup is delicious, chillis and spinach both have blood pressure reducing properties. Spinach is up in the top 5 of the healthiest veggies to eat and one of the few which are better for you when boiled (as are carrots) making them perfect soup veg! It is also reported that there are Anti-Inflammatory and Anti-Cancer Benefits from Spinach Phytonutrients.

Number of Servings: 6

Ingredients

    Carrots, raw, 1 medium
    Onions, raw, 1 large or a pre-sliced bag.
    *fresh red chilli, 1 (seeded) or to taste. Remove altogether if you don't like heat!
    *Celery - fresh 1 stalk (5" = 17g)),
    *Knorr Chicken OR vegetable Stock Cubes, 2
    *Marmite, .75 tsp
    *6-8 Cups Water, appx 1 litre
    *Aldi Frozen Peas, Corn and Carrots*, use fresh if desired. I find one bag of ready to steam veg is just right.
    *2x baby red potato, diced.
    *Frozen Chopped Spinach,appx 2-3 portions.
    * 1/2 tsp mixed herbs (or to taste)
    * Ground black pepper (to taste)

    * if not using frozen veg, add peas. corn and carrots as early as possible and dice very small.

Directions

EASY METHOD:

Take bag of onion, 1 carrot (washed), chilli if using (washed and de-seeded), celery (washed and trimmed) and blend with appx 50ml of water,

When finely chopped, add to a large pan and heat, try to make a little drier on a high heat but it doesn't matter too much.

Add diced potato to pan.

Add 1 litre of stock to the veg in pan.

When bubbling nicely, keep heat high and add spinach. When bubbling again, add marmite and peas, corn and carrots.

Season with mixed herbs and pepper.

Simmer for approximately 20 mins or until potatoes and veg are tender.

Check and adjust seasonings as required appx 1 min before serving.


Serving Size: Makes appx 6-8 starters or 3-5 big portions.
