Ingredients

1 c. oat flour (ground old-fashioned oats)
3/4 c. vanilla protein powder (can substitute more oat flour, but will affect nutritionals)
1 t. cinnamon
1/2 t. nutmeg
1 t. pumpkin pie spice
1 t. baking powder
1/4 t. salt
stevia to taste (I use about 1/2-1 t. of pure stevia extract)
2 flax eggs (mix 2 T. ground flaxseed + 4 T. water in a bowl and allow to thicken for 10 minutes)
1 c. canned pumpkin
1 t. vanilla extract
Directions
Preheat oven to 350 degrees.
In a large bowl, combine oat flour, protein powder, cinnamon, nutmeg, pumpkin pie spice, baking powder, salt and stevia.
Combine pumpkin, flax eggs and vanilla using a blender or food processor, and blend until smooth.
Add the pumpkin mixture to the dry ingredients and stir until combined.
Spread batter into an 8×8 pan that has been sprayed with cooking spray or lightly spritzed with oil.
Bake for 20-25 minutes or until bars are set. Let cool slightly before cutting into squares.
