1 butternut squash peeled, deseeded, halved and cut crosswise into thin slices
4 slices of turkey bacon chopped
1 1/2 tbspns canola oil
1 medium onion thinly sliced
2 tbspns flour
1/4 tsp pepper
1 cup chicken broth
1 1/2 cups shredded cheddar

Directions
preheat oven to 350.
cut squash and place in a large saucepan, adding enough water to cover the squash. Bring to a boil on high heat and simmer on medium low heat 8 to 10 minutes, or until squash is tender.
cook bacon in canola oil until crisp.remove from skillet and add the onions to the oil cooking 5 minutes. stir in flour and pepper and stir 1 minute. add broth. cook and stir 3 minutes or until thinckened. add 1 cup of the shredded cheddar.
drain squash. arrange half in 8 or 9 inch square baking dish - cover with half sauce. - repeat those layers, top with the bacon and the remaining cheese.
bake 25 to 30 minutes or until heated through.
Serving Size: makes 6 good sized servings or 8 smaller ones
