Ingredients

    Two cups dry couscous
    half an onion
    .25 cup of olive oil, split
    Three quarters of a cup of sundried tomatoes
    half a cup of green peppers
    Three cups of spinach
    A few tbs of rice vinegar
    Four tbs of Thai chili sauce (hot)

Directions

Make couscous as directed on box

Saute shrimp and onions, add all other ingredients after shrimp is cooked

Serving Size: One cup-ish
