Introduction

I wanted a savory, low-fat, good tasting chili to throw into the crockpot on a cool rainy day. I looked through my cupboards and this is it! It's fast and easy not because of the cooking time but because its fast to put together in the crockpot. I wanted a savory, low-fat, good tasting chili to throw into the crockpot on a cool rainy day. Ingredients

    I had 9 oz of ground sirloin in the freezer, so I used that.
    1 can of diced tomatoes
    1 can of mexican chili beans, mild
    2 cans of low sodium V8 juice (5.5 oz each)
    1 packet of chili seasoning mix (from Aldi)

Directions

I did this in the slow cooker but you could do it on the stove top. While browning the ground beef in a non-stick skillet, I set the crock pot on low, put in the can of diced tomatoes, the can of chili beans, and two 5.5 oz cans of V8 juice - low sodium, and the packet of chili seasoning. I stirred the ingredients in the crockpot, added the browned ground beef, put the lid on, and let it simmer on low for 6 hours. If you do this on the stove top, let it simmer with a lid on the pan for 20 minutes. It makes 6 one cup servings.
