Introduction

A delicious hearty Asian style kale soup. With Chicken it is low in carbs. The original recipe called for tofu and it is delicious this way as well. If using tofu, omit the chicken stock and just use all water for a totally vegetarian soup. A delicious hearty Asian style kale soup. With Chicken it is low in carbs. Ingredients

    3 large bunches Kale
    1 grocery store rotisserie chicken
    1 qt chicken stock or broth
    1/2 gal water
    6 T oyster sauce
    2 T fish sauce

Directions

Remove stems from kale leaves and chop the leaves into bite sized pieces.
Place kale,stock and water in a large stock pot. Bring to a boil and reduce to simmer to wilt leaves.
Remove the chicken meat from the bones, discard skin and chop the meat into bite sized pieces.
Stir in oyster sauce and add fish sauce to taste approx 2 T
Add meat and simmer until the kale is tender approx 45 mins total.
