Ingredients

    6 cups butternut squash cubes
    1 C chopped yellow onion
    4 T Extra Virgin Olive Oil
    1/2 C Italian seasoned bread crumbs
    3 tsp fresh thyme leaves
    3/4 C crumbled Feta Cheese
    1/4 C Italian seasoned bread crumbs
    salt and pepper to taste

Directions

Preheat oven to 425F degrees.
Toss the squash, onion, olive oil, 1/2 Cup Italian bread crumbs, thyme, and feta cheese in a large mixing bowl. Season with salt and pepper as needed. Pour mixture into a large baking dish. Sprinkle 1/4 Cup Italian bread crumbs over the squash. Bake in the preheated oven until lightly browned on top, about 35 to 40 minutes.
