Ingredients

1/2 c. Quaker Quick 1 Minute oatmeal
scant 1 c. light vanilla soy milk (use a litle less than 1c. for a thicker consistency)
3 to 4 dried apricots, cut into quarters
NOTE: add a teaspoon of pure maple syrup to the soymilk for a flavor boost if you don't mind an extra 25-30 calories!
Directions
Makes 1 serving.
Place 1/2 c. Quaker Quick 1 Minute oatmeal in microwaveable bowl that's large enough to contain the oatmeal as it cooks without bubbling over
In a separate microwavble container, heat cold vanilla soymilk in microwave for 60 seconds
Pour warm vanilla soymilk into oatmeal and stir well
Place bowl with oatmeal, soymilk and sliced dried apricots in microwave & cook for 35 seconds
Stir semi-cooked oatmeal mixture well then microwave for 45 seconds
Remove from microwave, stir then enjoy!
