Ingredients

1 cup canned chickpeas
1 cup chopped carrots
1 cup snap peas
2 cups frozen mixed vegetables (Normand or California Blend)
1/4 cup tomato sauce
1/2 cup vegetable broth
3 cloves minced garlic (adjust levels to taste)
fresh ginger root, grated (to taste)
2 TB Yellow Curry Powder (adjust levels to taste)
Directions
Mix the vegetable broth, tomato sauce, grated ginger, and minced garlic together in a bowl and whisk with fork until well mixed.
Place everything else in a large non-stick pan, toss together, pour sauce mix over everything and mix.
Simmer over medium-low heat until heated through, stirring occasionally.
