Number of Servings: 4

Ingredients

    1 lb. Pork Tenderloin, cut into 1-inch pieces
    2 T. olive oil
    Kosher salt and freshly ground pepper to taste
    1/2 cup water
    1 butternut squash (about 2 cups), cut into 1 inch pieces
    2 large apples (about 2 cups), pared, peeled, cut into 3/4 in pieces
    3 T. brown sugar
    1 t. cinnamon
    *Craisins to taste (I use about 1/6 cup) - optional

Directions

Coat pork pieces with flour. Brown in the slow cooker with olive oil). Add water and salt and pepper. Cook on low for 4 hours.

Add squash, apples, onion, brown sugar and cinnamon. Stir to combine. Cook 2 hours. Add more salt & pepper to taste. Stir in craisins. Serve over brown rice.

Butternut squash can be difficult to chop, Cut in half lengthwise and remove seeds, Cut each half into half lengthwise, then cut across in 1 inch strips, the cut into chunks. OR buy a pound of pre-cut squash!
