Introduction
Crunchy, crispy chocolate wafer cookies that are great for making crumb crusts or cookie sandwiches! Freeze the dough, then slice and bake as needed! Ingredients

½ cup salted butter
2/3 cup sugar
1 egg
½ teaspoon vanilla
1 ¼ cups flour
¼ teaspoon baking soda
1/3 cup cocoa powder
Directions
Cream butter, sugar, eggs and vanilla until light and fluffy.
Separately sift together flour, baking soda and cocoa.
Gradually stir flour mixture into sugar mixture until evenly distributed.
Shape, using dampened hands so it doesn't stick, into a long roll, about 8-10 inches long.
Wrap in a piece of waxed paper. Wrap again, air-tight, in large piece of heavy duty foil.
Freeze a minimum of 1 hour.
Alternatively, store in freezer and use within 6 months.
To use:
Preheat oven to 350 degrees. Lightly grease 2 large baking sheets.
Cut frozen dough into ¼” slices.
Place slices on prepared baking sheets about ½ inch apart.
Bake 8 to10 minutes, until cookies are set and slightly firm on top.
Remove and cool completely on wire rack.
