Introduction

Ingredients

    1 1/2 cups bran flakes, lightly crushed
    1 cup mashed banana
    1 egg, beaten
    3 T plain non-fat yogurt
    2/3 t vanilla extract
    1 cup flour
    1/2 cup Splenda (use whatever sweetener you want and adjust to your taste)
    2 1/2 t baking powder
    1/3 t baking soda
    1/8 t ground nutmeg
    1/8 t salt

Directions

Combine ingredients through vanilla and let sit at least five minutes. Combine remaining ingredients, then stir in banana mixture until just mixed. Scoop into silicone muffin cups (or try nonstick, sprayed, whatever) and bake at 375 degrees for 15-25 minutes, until toothpick tests clean.

Serving Size: 12 muffins
