Number of Servings: 6

Ingredients

    250 grams Beans, white (washed and soaked overnight in cold water)
    1 medium (2-1/2" dia) onion, sliced
    1 medium carrot, cubed
    1 large stalk of celery, cubed
    1 large potato, cubed
    1 cup of canned tomatoes
    1/2 Green Peppers (bell peppers) strips
    0.25 cupOlive Oil
    Salt & papper to taste

Directions

Place the beans in a large pot filled with enough water to cover the beans and boil, covered, for about 30 minutes (or until they are soft)
Drain the beans using a colander.
Place the potato, onions, celery and carrots to the pot and bring to boil.
Once vegetables are soft add the beans along with 1/4 cup of olive oil and the canned tomatoes
Bring mixture to boil and allow an additional 20 minutes of boiling time.
Remove from heat and serve hot.

Serving Size: makes 6 2 &1/2 cup servings
