Introduction

I can't seem to make enough of this soup. I have a 15 year old daughter and 13 year old son and they eat bowls and bowls of it. I will confess that all the ingredients (except for the seasoning and bacon) for this soup are purchased locally (yes, even the dried beans are locally grown and dried). If you ever get the chance to buy dried beans locally I highly, highly recommend it. The difference in taste is amazing. Also, if you EVER see fresh, locally grown celery please try it. It will be as if you are eating a whole new vegetable. Last, I put a bit of the bacon drippings in the soup for a bit more flavor. I can't seem to make enough of this soup. Ingredients

    3 c. dried bean mix with lentils (soak overnight)
    4 cups water or enough to cover beans over 1"
    1 med. carrot, sliced
    1 large celery stalk, sliced
    1/2 c. chopped onion
    3 - 4 slices of bacon, fried crisp and chopped
    1 - 2 T of bacon drippings
    2 t. creole seasoning (more if you like to spice things up some)
    1 t. black pepper

    Soak beans overnight. Drain and rinse. Put beans with the rest of ingredients in crock pot. Cook on high 4 hours or low 6 hours. The longer you soak the beans the less cooking time required.
