Introduction
Today I used beef, but it doesn't need it if you want to go vegetarian. Also if you don't have a mandoline I highly recommend getting one for veggie and fruit prep. Ingredients

2 zucchini julienne cut
1/2 cup shredded carrots
125 grams (1/2 container) sliced portobella mushroooms
1 Jar 365 Roasted Vegetable Pasta Sauce (Whole Foods)
2.5 oz Whole Grain Pasta w Flax (bella terra capellini)
1lb Angus Beef 96 lean (optional,was included in nutritional info)
OPTIONAL- light string cheese( not included)
Directions
1-Boil water. Add pasta and cook noodles until still a little firm.
2- Meanwhile in a large skillet cook the mushrooms carrots and top with zucchini then add jar of pasta. Continue to simmer and add pasta (they will soak up sauce and taste even better).
3- Meanwhile cook beef in seperate skillet. and add to pasta mix once finished.
4- Serve with optional string cheese (easy way to add cheese to each serving and control amount)
Makes 9 1-cup servings.
