Ingredients

2 cups of flour
1 cup of sugar
1 bag of semi-sweet chocolate chips
1 large can of pumpkin
1 tsp of vanilla extract
1/4 tsp of nutmeg
1/4 tsp of cloves
1/2 tsp of cinammon
1 tsp of baking powder
1 tsp of baking soda
2 large eggs
1/4 cup of canola/corn oil
Directions
Heat oven to 350 degrees. In a mixing bowl, mix the flour, banking soda, baking powder, and spices. Set aside.
In another mixing bowl, mix 2 eggs and sugar with mixer until consistency is smooth and a light yellow color. Add in the vanilla and oil and canned pumpkin (not canned pumpkin pie mix) and blend.
Add flour mixture to the pumpkin mix and blend. Mix in the semi-sweet chocolate (1 whole bag).
On cookie sheets (lined with foil), spoon mix onto sheet. I generally get 6 balls of dough on a sheet because I make them bigger than normal cookie size.
Bake for 18 minutes or until knife comes clean. If you bake multiple sheets at a time like I do, rotate the sheets after 10 minutes to keep at an even cook rate.
