Number of Servings: 2

Ingredients

    12oz Turkey breast (Cutlets Preferred)
    1 Medium Onion, Chopped
    1 Medium Tomato, Chopped
    1 Cup Sliced Mushrooms
    2 Tbsp Olive Oil
    4 Tbsp Balsamic Vinegar

Directions

1. Heat a pan with the Olive Oil
2. Add onions and mushrooms and cook until they are starting to brown.
3. Add tomatoes and vinegar and stir. Let it reduce down slightly.
4. Transfer vegetables and sauce from pan into a bowl until later.
5. Add the Turkey to the pan and brown on both sides.
6. Return the vegetable mixture to the pan over the turkey.
7. Simmer until turkey is completely cooked. Serve

Best served with brown rice...the veggie mixture tastes great on that too.

Serving Size: Makes 2 6oz Servings of Turkey
