Introduction

Ingredients

1 pound boneless, skinless chicken breast
Kosher salt to taste
Black pepper to taste
1 cup brown rice
10 cloves garlic (smashed)
1/2 cup sun-dried tomatoes
2 cups water
1/2 cup lemon juice
1/4 cup extra virgin olive oil
Directions
1. Season chicken with salt and black pepper. Place chicken in crock-pot slow cooker. Add rice, garlic, and tomatoes. Stir well.
2. Mix water, lemon juice and oil in small mixing bowl. Pour mixture over rice and chicken. Stir once to coat chicken. Cover; cook on LOW 8 hours.
Note: I love to add in red bell pepper, onion, spinach too!
The rice can get mushy but I love it that way. I have also added it with 1.5 hours left and it has stayed firmer.
Serving Size: Makes four servings
