Ingredients

    Dry Ingredients:
    1.5 cup old fashioned oats
    1.5 cup whole wheat flour
    3/4 cup brown sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp allspice
    1/4 tsp nutmeg

    Wet Ingredients:
    1.5 cup pureed pumpkin
    3 tbsp canola oil
    1 large egg
    1 large egg white
    1/4 cup low fat milk

    Optional MIx-Ins:
    1/2 cup chocolate chips
    1/2 cup walnuts

Directions

Combine dry ingredients in a large mixing bowl. Combine wet ingredients in a separate bowl. After mixing dry ingredients, add mixed wet ingredients. Stir in mix-ins. Add to a muffin pan and bake at 375F for 18 - 25 minutes.
