Introduction
Whipped up this soup for my lunches with ingredients I already had at home. Very easy and can make modifications based on what you have at the time!! Ingredients

Olive Oil, 2 tbsp
Onions, raw, 1 cup, chopped
Garlic, 3 cloves, crushed
Celery, raw, 1 cup, diced
White Wine, 1 fl oz
Curry powder, 1 tbsp
Salt, 3 tsp
Pepper, black, 2 tsp
Coriander seed, 1 tbsp, crushed
Pepper, red or cayenne, 1 tsp
Potato, raw, 3 or 4 large, diced
Water, tap, 4 cup (8 fl oz)
Bay Leaf, 1 leaf
Rice Dream Original rice milk, 1.5 cup

Directions
cook garlic, onion, celery in olive oil until softened. add spices. cook another minute or so then deglaze with white wine (optional). add potato and enough water to cover. toss in bay leaf. gently boil until potatoes have softened. lower heat. Using an immersion blender, blend until desired consistency. I like it a little chunk. Add rice milk until thinned to desired consistency. Top with nutritional yeast flakes for a little added flavor and a healthy boost.
