Introduction

Ingredients

    6 large red potatoes, peeled & cubed
    1 large onion, diced
    1 quart reduced sodium chicken broth
    3 garlic cloves, minced
    1/4 cup butter
    salt to taste
    pepper to taste

    1 cup fat free half and half
    1 cup shredded sharp cheddar cheese
    Garnish: chives, sour cream, bacon and cheese

Directions

Combine first 7 ingredients in a large slow cooker and cook on high for 4 hours or low for 8 hours (potatoes should be tender). Then you will need to mash potatoes until coursely chopped and soup is slightly thickened. Stir in half and half and cheese.

Garnish with toppings (calories for toppings not included).

Serving Size: makes 10 servings (3/4 cup each).
