Introduction

I wanted an alternative to chicken soup to nurse my cold. This turned out really yummy.
NOTE: ** not sure I agree with the sodium content in the calculation because I think the database had only cooked/processed turkey listed**

Ingredients

    Ingredients:
    2.3 pounds - raw turkey breast cut into cubes
    1 tsp dried time leaves
    1 tsp dried sage
    1 tsp dried basil
    2 bay leaves

    Carrots, raw, 1.5 cup, chopped
    Celery, raw, 1.5 cup, diced
    Red Bell Pepper, 1 cup chopped
    Onions, raw, 1 cup, chopped
    Okra, 1.5 cup slices
    Quinoa, 1.5 cup
    Low Sodium Vegetable Broth, 8 cups
    Water, 10 cup

Directions

Bring water to boil and add herbs and bay leaves,
Boil chopped turkey breast in herbed water for 15-20 minutes until cooked.
Add vegetables and broth - simmer for 10 minutes.
Add quinoa and simmer for 10 minutes more.
Add or decrease water to taste.

Serving Size: Makes 10 1.5 - 2 cup servings
