Ingredients

    8 cups chicken broth
    3/4 lb. cubed smoked ham
    2 small yellow onions finely chopped
    1/2 red bell pepper finely chopped
    4 med. white potatoes peeled & diced
    3 c. frozen corn
    1 can of whole kernal corn
    1 1/2 tsp. table salt
    1/4 tsp. cayeene pepper
    1 cup 2% milk
    12 oz. can of fat free evaporated milk
    1 4 oz. can chopped green chilis
    1/4 cup cornstarch

Directions

Simmer onion, bell pepper, and diced potatoes in chicken stock until tender. Add the corn, ham, salt and cayeene and simmer for an additional 10 minutes. Mix the cornstarch and 2% milk together. Turn up heat on soup pot til mixture bubbles. Slowly pour milk/cornstarch mixture into pot to thicken slightly. Add green chilies and evaporated milk and simmer slightly more. Turn heat off and allow to rest for 10 - 15 min. for flavors to blend.
