Ingredients

    Family size frozen chopped spinach bag
    Athenos brand Feta Cheese, 1 block
    Fillo Dough
    3 Large Garlic cloves
    1/2 Onion (yellow or white)
    1 stick of Real Butter
    2-3 eggs
    1tsp Salt
    1 tsp Pepper
    2 T Basil

Directions

Food processor will make it easier...

Thaw spinach and squeeze out all excess juice. Put into food processor. Add 2-3 eggs, onion, garlic, salt, pepper and basil (I never measure). Start the food processor until all ingredients are chopped and mixed well.

Cut Feta into cubes and place in the food processor around the top. Start food processor. You want the cheese to be mixed well but not too small.

Fillo dough should be thawed. Butter needs to be melted, not hot. Open and unroll one package of fillo dough at a time. It will dry out and become more brittle and will rip easily. It is fragile, so be careful. Place one sheet onto a cutting board and lightly butter with a brush. Then repeat. I generally use two-three sheets, the more you use the flakier it will be.

Now take a tablespoon of your spinach mixture and place right below the half way mark and fold in half. Now fold up into triangles.

Place on cookie sheet, butter tops. Make a slit so it can breathe.

Oven should be at 350 for about 15-20 minutes, until tops are golden brown.

Serving Size: Makes 20 4-5" triangles
