Ingredients

    2 sweet potatoes - cubed
    2 granny smith (or other) apples - cubed
    1 Tbsp maple flavoring
    stevia
    1/2 tsp salt
    1 tsp parsley flakes
    water

Directions

Preheat the oven to 375. Cube the sweet potatoes and apples and put in a large mixing bowl. In a measuring cup, combine the maple flavoring, stevia (I use 4 of the little mini-scoops that come with the pure powdered KAL stevia), and salt with 1/2 cup hot water. Pour the liquid mixture over the cubed potatoes and apples and stir to coat all pieces with the mixture. Pour onto a cookie sheet and spread out into a single layer. Sprinkle with parsley flakes. Bake for 45-55 minutes or until fork tender. YUM!
