Ingredients

    Pumpkin, canned, without salt, 2 cup
    Applesauce, unsweetened, 1 cup
    Egg substitute, liquid (Egg Beaters), .5 cup
    Cinnamon, ground, 1 tsp
    Baking Powder, 1 tsp
    Salt, .5 tsp
    Nutmeg, ground, .5 tsp
    *Wheat flour, white, bread, enriched, 1.67 cup
    *Flour - Unbleached White Whole Wheat, 1.67 cup
    Granulated Sugar, 1 cup
    *Sucralose (like Splenda), 48 tsp
    Baking Soda, 1.5 tsp
    *1 c nonfat dry milk powder, .5 serving
    Walnuts, 1 cup, chopped (optional - nutrition analysis includes them)

Directions

1. In a mixing bowl, combine the sugar, pumpkin, applesauce and egg substitute. Mix well.
2. Combine the flour, cinnamon, baking soda, baking poweder, salt and nutmeg. Gradually add to pumpkin mixture and mix well.
3. Stir in nuts.
4. Pour into two 8"X4"X2" loaf pans coated with nonstick cooking spray.
5. Bake at 350 degrees F for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
(optional ingredients: chocolate chips or raisins are great in this quick bread, but it will change the nutritional analysis.)

Serving Size: Makes about 20 servings - 10 slices per loaf.
