Introduction

Quick and easy salad I made to use up my leftover chickpeas and rotisserie chicken. High in fibre and protein, and clean-eating friendly. Quick and easy salad I made to use up my leftover chickpeas and rotisserie chicken. High in fibre and protein, and clean-eating friendly.

Ingredients

    1 cup dry quinoa
    1 cup cooked chickpeas
    1 skinless chicken breast, cooked and chopped
    1/2 cup chopped red onion
    1 Tbsp ground cumin
    1/2 Tbsp paprika
    1 tsp cinnamon
    Salt & pepper as needed



Directions

Cook quinoa as per package directions. Combine all ingredients and chow down!

Also yummy: Throw in some fresh mint or parsley. Could add some raisins or chopped dried apricots. Would also be good with olives!

Serving Size: Makes 5 3/4-cup servings
