Ingredients

    2 TBS Canola Oil
    1 large Leek, chopped
    3 stalks celery, chopped
    1 large carrot, chopped
    8 oz. pkg. sliced Portebella Mushrooms
    1 small head cauliflower, chopped
    6 c. chicken broth (Knorr home-style)
    Bouquet Garni: 1 large Bay leaf, 1/2 tsp. tarragon, 1 tsp. peppercorns
    2 c. Silk light original soy milk
    8 oz. Creme Fraiche

Directions

Saute vegetables in oil briefly; add broth & bouquet garni. Simmer until vegetables are tender. Stir in Silk & Creme Fraiche. Heat through.
