Quick and easy salad awesome as a side dish or a main course.

Number of Servings: 2

Ingredients

    1 c cooked wild rice
    1 c parsley, chopped
    1/4 c diced tomato
    1/4 c diced red onion
    1/4 c diced snow peas
    1/4 c carrot
    1/4 c radish
    1/4 c cucumber
    1/4 c soy sauce
    3 TBSP brown rice vinegar
    Seasonings to taste: salt, pepper, fatoosh seasoning mix, etc.

Directions

Cook wild rice according to directions. Allow to cool.
Add rice and vegetable to a large bowl. Toss together. Add dressing (soy sauce and vinegar) and seasonings and toss again. Refridgerate (if time) to allow flavors to develop.
