Ingredients


    Spinach, fresh, 8 cup
    Cranberries, dried, sweetened (craisins), 0.5 cup
    Feta Cheese, 2 oz
    Bottled Cranberry Juice Cocktail, 1 fl oz
    *Balsamic Vinegar, 1 tbsp
    Olive Oil, 2 tbsp
    Honey, 0.5 tbsp.
    Pecans, 0.25 cup, chopped

Directions

1. In a large bowl, combine the spinach and cranberries.

2. Place the cranberry juice, vinegar, and honey in a blender. Slowly pour in the olive oil while the blender is running.

3. Pour the dressing over the salad.

4. Garnish salad with feta cheese and pecans.
